5 Min Boule Bread

5 Min Boule Bread (4 1 lb loaves)

3 cups lukewarm water
1 1/2 Tbsp yeast
1 1/2 Tbs salt
6 1/2 cups white flour (or 1/ 1/2 cups wheat flour plus 5 1/2 cups white)
cornmeal or flour for surface

Make dough:
1. Mix dough in 5 quart bowl until all flour is mixed in without kneading.
2. Cover loosely and let raise about 2 hrs. (longer is ok)
3. Refrigerate in a NOT airtight container for up to 2 weeks or bake now.

To bake:
1. Sprinkle cutting board with flour or cornmeal and also sprinkle surface of dough before pulling out a grapefruit sized piece.
2. Stretch edges around ball and let it rise on cutting board 20-40 minutes before baking.
3. While preheating the oven to 450 degrees, place cookie sheet and broiler pan into the oven to warm.
4. Dust top of dough with flour and slit the top.
5. Put onto hot cookie sheet and pour water into the broiler pan.
6. Bake 30 minutes and try to let it cool before cutting into the loaf.
