Aebleskivers

You need an aebleskiver pan.
The recipe looks complicated but is really quite easy, just takes a little getting used to :)

Directions

  1. In a clean glass or metal bowl, beat the eggs until frothy.
  2. Mix together the flour, baking powder, salt, baking soda, sugar, egg yolks, melted butter and buttermilk at one time and beat until smooth. Gently fold in the eggs last.
  3. Pour the batter into a zip-lock bag and cut off one small corner. (You can also use a spoon to put the batter into the pan, I think zip-lock is easier) 
  4. Heat up the pan. Use the frozen stick of butter to grease each cup. (I like frozen butter because it melts slower so the finished product is not greasy) Turn the heat to medium-low. Squeeze in the batter, fill each cup to about 2/3 full. As soon as they start to harden around the edge, turn them quickly (Danish cooks use long knitting needles, but two kebob sticks or a fork will work). Continue cooking until the other side is golden brown.
  5. If you want to make stuffed aebleskivers, have the stuffing and small spoons ready (jam, nutella, peanut butter and chocolate chips all work). After putting batter in the pan, quickly put a small dollop (1/4 tsp) in the middle of each batter cup, and cover the stuffing with a tiny bit more batter. It requires a little practice and if you feel that they might burn, it's ok to take the pan off the heat temporarily while you put stuffing in. Then continue to flip and let cook.
