Festive Sweet Potatoes or Yams


Festive Sweet Potatoes or Yams

3 cups cooked and peeled sweet potatoes or yams
1/3 cup granulated sugar
½ cup milk
1/3 cup melted butter or margarine
1 tsp. vanilla
2 eggs, beaten
Combine these ingredients, mix well.  Spoon this mixture into lightly greased casserole dish.
Topping:
1 cup flaked coconut
½-3/4 cup brown sugar
2/3 cup flour
1/3 cup butter or margarine, melted
1 cup chopped nuts (optional)
Combine topping ingredients and sprinkle over the top of sweet potatoes. Bake at 375 degrees for 25 minutes or until golden brown.
