CELERY SEED DRESSING:
½ c. sugar
1 tsp. dry mustard
1 tsp. salt
1 tsp. paprika
¼ tsp. pepper
1 T. celery seed
1/3 c. red wine vinegar
1 c. oil (I only use 2/3 c.+ a touch more)
¼ onion, grated with the juice (chop onion, put in a baggie in freezer, then thaw—keeping any ‘juice’)
SALAD INGREDIENTS:
1 head butter lettuce
1 head red or green leaf lettuce (I like red)
mango (cut in long slices)
green or red grapes (I like red)
pecan halves
avocado (slice & add last minute)
strawberries, opt.
DIRECTIONS:
Mix dry ingredients in food processor, mix oil & vinegar in a measuring cup, then add to dry ingredients slowly with the food processor on. Pour dressing into another container, then put the onions into the food processor. Once they are pulverized, dump the dressing back in and give it a few pulses to mix.
Arrange salad ingredients in a bowl or on individual plates. Serve dressing separately.
**Excellent paired with a grilled salmon main dish… and if a little of the dressing happens to get on the salmon, it’s all the better.
