Summer Salad (from Belgium)

2 Cucumbers
¼ C Balsamic Vinegar
6 Roma Tomatoes
¼ C Olive Oil
¼ of Small White Onion
Salt
2 Tbsp freshly chopped Parsley
Pepper
Peel and slice up Cucumber into large bowl. Cut off ends of Tomatoes, stand on larger end and slice into 6 wedges per tomato and add to bowl. Dice Onion into small pieces and add to bowl. Chop Parsley as fine as possible and add to bowl. In separate container, mix oil and vinegar and adjust balance to your taste, adding more vinegar if you want more flavor, more oil if it is too strong for you. Add dressing to bowl and mix well. Sprinkle Salt and Pepper over top and lightly toss to finish.
