Good and Healthy Green Beans

1 medium sweet onion such as Vidalia or Walla Walla cut into 1/2 to 3/4-inch rings
1 Tbsp. olive oil or vegetable oil
1 lb. green beans, trimmed if desired
1 to 2 tsp. snipped fresh rosemary
1 clove garlic, minced
1/8 tsp. salt
2 peaches or nectarines
1 Tbsp. lime juice

1. In a 12-inch skillet cook onions in hot oil over medium heat for 5 minutes or until just beginning to soften, stirring occasionally. Add green beans, rosemary, garlic, and salt. Cover and cook about 10 minutes more or until beans are crisp-tender. Meanwhile, halve and pit peach; cut into slices. Remove bean mixture from heat and toss in peach slices and lime juice.

2. Transfer green beans to serving bowl. Serve either hot or chilled. Makes 4 servings.
